
Ají de Gallina: The Peruvian Classic
Ingredients:
- 1 kg of chicken breast
- 3 tablespoons of La Latina or Sibarita Amarillín yellow chili paste Doypack
- 1 tablespoon of La Latina or Sibarita Panquita Doypack panca chili paste
- 2 medium onions, diced
- 3 tablespoons of Sibarita Garlic Doypack
- 200 g of sliced bread (without crust)
- 1 cup evaporated milk
- 1/2 cup grated Parmesan cheese
- 1/3 cup ground walnuts or pecans
- 2 tablespoons of vegetable oil
- 2 large yellow potatoes, cooked and sliced
- 3 hard-boiled eggs, sliced
- 12 black olives
- Cooked white rice to accompany
- Salt and pepper to taste

Cook the chicken : In a pot with water, salt, and a bay leaf, cook the chicken until tender (about 25 minutes). Reserve the broth. Let the chicken cool and shred it with your hands.

Prepare the base : In a large skillet, heat the oil and sauté the onion and garlic until translucent (about 5 minutes).

Make the sauce : Soak the bread in the milk. In a blender, combine the soaked bread with the La Latina yellow chili paste or Sibarita Amarillín Doypack. Add this mixture to the pan with the onion and garlic. Cook over medium heat, stirring constantly.

Add flavor : Add a tablespoon of La Latina or Sibarita Panquita Doypack panca chili paste to give the dish a deeper, more authentic flavor.

Combine the ingredients : Add the shredded chicken, ground walnuts, and 1 cup of the reserved broth. Cook for 10 more minutes over low heat, stirring occasionally.

Finish : Add the Parmesan cheese, mix well and season with salt and pepper to taste.

Serve : Serve with a portion of white rice, accompanied by ají de gallina. Garnish with potato slices, hard-boiled egg, and black olives.
Tips:
- For a more intense flavor, you can add an additional teaspoon of Sibarita Panquita Doypack panca chili paste.
- If the sauce is too thick, you can add more chicken broth until you get the desired consistency.
