El Pepián de Mote es un plato tradicional peruano que combina la textura única del

For Pepián :
- 2 cups of corn Nickname He Plebeian 500g soaked and cooked
- 500g of beef cut into pieces
- 1 large onion, chopped
- 2 teaspoons of Sibarita Garlic Doypack 250g
- 1 tablespoon of pasta Chili Yellow The Latin 225g
- 1 teaspoon of Pasta Annatto The Latin 225g
- 2 chopped tomatoes
- 1 sachet of Ajinomoto About 100g
- 4 cups of beef broth
- Salt and pepper to taste
- Vegetable oil
For Accompany :
- White rice
- Boiled cassava
- Creole salad
Step-by-step preparation :
1. Soak the Corn Nickname He Commoner for 8 hours or all night .
2. Cook the mote in salted water until tender but firm , about 2 hours . Drain and set aside .
3. In a large pot , heat oil and brown the pieces of meat on all sides .
4. Add the chopped onion and sauté until translucent .
5. Incorpora Sybarite Garlic , Paste Chili Yellow and Paste Annatto . Fry for 3 minutes .
6. Add the chopped tomatoes and cook until they dissolve .
7. Pour in the hot beef broth and bring to a boil .
8. Add the cooked mote and season with Ajinomoto , salt and pepper .
9. Cook over medium heat for 30-40 minutes until the meat is tender and the stew thickens .
10. Serve hot accompanied by rice , yuca and Creole salad .
