Peruvian Anticuchos: Tradition in Every Bite
Anticuchos are one of the most iconic dishes of Peruvian cuisine. This delicious preparation of marinated and grilled meat captivates palates with its unique flavor and irresistible aroma.
Ingredients (for 4 people):
- 1 kg of beef heart or beef cut into cubes
- La Latina Panca Chili Paste 225g (available in our store)
- La Latina Yellow Chili Paste 225g (for the sauce)
- Rocoto Paste La Latina 225g (for the spicy sauce)
- Sibarita Garlic Doypack 250g
- Ajinosillao 500ml
- Red vinegar
- Cumin
- Salt and pepper
- Tender corn
Preparation:
For the marinade:
- Mix the panca chili paste with ground garlic, ajinosillao, vinegar, cumin, salt and pepper
- Marinate the meat for at least 2 hours (ideally overnight)
For the sauces:
- Yellow Sauce: Mix yellow chili paste with mayonnaise and a touch of lemon
- Rocoto Sauce: Combines rocoto paste with fresh cheese and milk
Cooking:
- Thread the marinated meat onto wooden skewers
- Grill for 8-10 minutes, turning constantly.
- Serve with boiled corn and sauces.
