The Castilla bean , also known as black-eyed peas or cowpeas , is a traditional legume highly valued in Peruvian cuisine . Recognizable by its characteristic black "eye" on a cream background , this bean combines a mild and delicate flavor with a firm texture that makes it ideal for numerous preparations .

 Basic preparation :
 1. Wash the beans and check that they have no impurities. 
2. Soak for 6 - 8 hours or overnight
 3. Drain and cook in fresh water for approximately 45 - 60 minutes
 4. Season to taste with onion , garlic and aromatic herbs

 Store in a cool, dry place , away from moisture .
