The pallar , also known as Lima bean or garrofón , is a large legume native to Peru with more than 7,000 years of history . Cultivated since pre-Inca times , this large, flat, creamy-white bean is prized for its smooth texture , delicate flavor, and culinary versatility .

 Basic preparation : 
1. Wash the beans and check that they have no impurities.
 2. Soak for 8-12 hours or overnight
 3. Drain and cook in fresh water for approximately 1 - 2 hours
 4. Traditionally seasoned with onion , garlic , yellow pepper and aromatic herbs
 
Store in a cool, dry place , away from moisture .
